Forget what you were told growing up. You can totally play with your food! Having fun with your nutrition is one of the best ways to stick to your healthy goals! At my house, this might look like what we call “everything in a boat” dinner. Two of the three “boats” are even edible! It’s a warm weather favorite because everything is light and refreshing! Here’s what’s included on this playful menu:

 

Appetizer: Pepper boats filled with roasted red pepper hummus sprinkled with fresh garden chives

Main Course: Endive boats stuffed with wild-caught canned salmon with olive oil, minced celery, and sliced scallions

Dessert: Avocado boats loaded with dairy-free avocado chocolate pudding sprinkled with lightly roasted pumpkin seeds and unsweetened shredded coconut (so delish and you don’t even realize avocado is the star of the show!)
